Almond / Badam Murukku is an easy snack recipe. It was in the long pending list and yeah, I was planning to post this for last year Diwali but I could not. It is time for Gokulastami and did not want to make any delay. This murukku turned out very crispy and loved the flavour of it. Try this unique murukku, for this festival and enjoy munching 😋
INGREDIENTS:
Rice flour - 1 cup
Almond flour - 1/4 cup
Cumin seeds - 1 tsp
Melted Butter - 1/4 tsp
Asafoetida - 1/4 tsp
Oil - for deep frying
Salt - as needed
Water - as needed
HOW TO MAKE:
Take a bowl and add all the ingredients except water. First just mix everything and make a crumble texture. Then add water little by little and make a non sticky smoothy dough.
Take a two ladles which has flat surface as shown in the below picture (Flat small plate can be used too). Grease the ladle top surface by using little oil. Take a little dough and stuff inside the murukku press.
Heat oil in the deep kadai. To check the oil is hot enough, just drop little dough and if it pops up right away then the oil is hot enough for frying the murukku. Take a ladle and drop the pressed murukku slowly in the hot oil. Do not flip the murukku immediately (it may break), let it stay for a min and then flip on the other side.
Now you can see the murukku sinking under the oil, or when it bubbles down the murukku is ready to remove from the oil. Take out the murukku and drain it on the paper towel.
Once it is cooled down store it in the airtight container.
TIPS:
Check salt before you add water or mixing the dough. Adding salt at the end may uneven.
Cashews, walnuts and other nuts can be added instead almond.
Always drop the murukku once the oil is hot enough for frying. Do not fry in high flame, it results, the murukku get brown fast and may not cook fully.
