KESARI




                                                   Kesari is one of my favourite sweet which my Mom makes.  In my childhood I still remember that my Mom used to make atleast once in a month which she prefer to cook easily.  For Diwali she makes this with full ghee and always it looks colorful and delicious :-)  Fine...let me move on to how to make Kesari...

INGREDIENTS:

Rava / Sooji        - 1 Cup
Sugar                  - 1 Cup
Ghee                   - 1/4 Cup
Water                  - 2 Cups
Kesari color        - A pinch
Cashews             - Fried 10

HOW TO MAKE:

* Heat the pan and add a tsp of ghee and fry the rava in medium flame until a nice aroma comes and the rava will start turning in golden brown.

* Transfer the mixture to a plate and keep aside.

* Add water in the pan and allow it to boil also add one tsp of ghee, then add the rava little by little into the boiling water and keep stirring continuously.

* Keep in a medium flame and stir well and take care of no lumps are formed.

* Cook for 4 to 5 minutes until the rava cooked well.

* Add the sugar and kesari color and stir it well.

* Add ghee and fried cashews.

* Stir in medium flame for 5 mins still the kesari forms nicely.

 I dont prefer elachi powder in kesari so I didnt add it.  Add a pinch of elachi powder if desired. :-)
