KOVAKKAI FRY / TINDORA FRY / KOVAKKAI VARUVAL


Dondakaya fry is an authentic Andra recipe which they serve this delicious stir fry as a part of a special meal.  They add grated coconut called Kobbari.  I skipped adding kobbari.  It is an simple and scrumptious fry which goes well with any meal as a side dish.

INGREDIENTS:

Kovakkai / Tindora - 1/4 Kg 250 gms
Red chilli powder    - 1 tsp
Turmeric powder     - 1/4 tsp
Roasted Peanuts       - 2 tsp
Asafoetida                 - a pinch
Salt                            - as needed

To temper:

Oil                             - 1 tsp
Mustard seeds           - 1/4 tsp
Cumin seeds              - 1 tsp


HOW TO MAKE:

Wash kovakkai and cut into slices. Heat oil in a kadai / pan and splutter mustard seeds.  Add cumin seeds and asafoetida.  Add kovakkai slices.  


Fry well until shrinks and and slowly it will lose the moisturiser.  Keep stir often so that they dont's burn.    Add chilli, turmeric powder salt this stage.  Stir well. 


Meantime in a blender /mixie add peanuts and make a coarse powder.  I used roasted peanuts.  You can dry roast the peanuts and can be grounded.


Once kovakkai get cooked add grounded peanut.  


Blend well and let the grounded peanut mix with kovakkai.  


TIPS:

Do not add water, let the kovakkai get cooked with frying with a tsp of oil. 

Peanuts is an optional.  Idly podi can be added instead grounded peanut.
