KOYA ROLL / MAWA ROLL

It's holiday time! Kids are at home and they are always roaming in the kitchen to munch something or other. Bought khoya to make gulab jamoon but could not do it. It was there in my freezer for a week and it striked me to do something different. The result ended up with khoya roll :-) It was really good and delicious. Kids loved it. Just for quick time snack we can make this easily with readily available ingredients. Try this Khoya roll for this christmas holidays and enjoy your time :-)

INGREDIENTS:

Spring roll sheets      - 4 to 5 or as needed ( in one sheet you can make two rolls)
Unsweetened Khoya - 1 cup grated
Powdered sugar        - 3/4 cup
Cardamom powder   - a pinch
Oil                             - for deep frying

HOW TO MAKE:

Take khoya / mava and grated it.  Powder sugar in the blender / mixie and take 3/4 cup or a cup.  Its depends on the sweet how much you want.  For us 3/4 cup is good enough.  In a bowl add grated khoya, powdered sugar and cardamom powder.

Mix well by hand and knead it like chappathi dough.  Keep aside.  Now take the pastry sheet / spring roll sheet from the freezer and allow to thaw for 10 mins.  The sheet should be flexible to roll.  Cut into half and if you want a big roll then need not to be cut.  Cover the sheets with wet cloth so it will not lose the moisture.

Make small balls from the mixed dough and keep aside.  Spread the sheet on the flat surface and place one small ball of the khoya mixture at one edge as shown in the picture below.  Fold two sides and then start rolling it from the top as shown below.

Make as many you want and complete the process for the remaining khoya mixture.  Cover the rolls with wet cloth.  Meanwhile heat oil in the deep kadai / pan and once it is hot enough for frying start frying the rolls.

Put 5 to 6 at a time or as depends on the kadai / pan level.  Flip during fry so that it will cook fully. Fry it in a medium flame until it turn to golden brown.  Drain on the paper towel to remove the excess oil.

Serve hot crispy khoya rolls.

TIPS:

Fry the rolls in a medium flame so that it will get cooked equally.   High flame will get fry immediately but will not get cook inside.

If you by sweetened khoya do not add sugar.

Powdered nuts can be added for extra crunchy.
