QUINOA & BLACK BEAN PULAO


Healthy pulao with Quinoa with black beans.  Very good source of protein, iron and fiber and with black bean it is double of the benefits.  My family likes quinoa in any form, so I often including in our diet and I just love it! I have waxed on about quinoa in my past Quinoa recipes so its better I could go directly to the recipe.  

INGREDIENTS:

Quinoa                  - 1 cup
Black bean            - 1/2 cup (I used tinned one)
Onion                    - 1 finely chopped
Garlic                    - 1 tsp grated
Tomato                  - 1 finely chopped
Green chilli           - 2 slit on the edge
Mint leaves           - 1/4 bunch
Red chilli powder - 1/2 tsp
Turmeric powder  - 1/4 tsp
Garam masala       - 1 tsp
Salt                       - as needed
Water                    - 2 1/2 cups

To temper:

Oil                       - 2 tsp
Cumin seeds       - 1 tsp

HOW TO MAKE:

Wash and drain the quinoa.  Keep aside for 10 mins.  Pressure cook quinoa with 2 1/2 cup of water Cook in medium flame and cook for 15 mins.  Do not need to put a whistle.  Once cooked spread it on the plate and keep aside. 


Heat oil in a kadai add cumin seeds, chopped onion and green chilli.  Add grated garlic and fry until turn into transparent.  Add chopped tomatoes and washed mint leaves.  


Blend them well and add red chilli & turmeric powder and garam masala.  Add washed black bean. (I used the tinned one. If you are not using the tinned one,  then soak the blean for 5 to 6 hours. Pressure cook and allow 4 to 5 whistles, then add the bean)


Add needed salt and mix the bean with masala.  Cook for 5 mins then add cooked quinoa.  Blend well along with the masala.  Turn off the stove.  Serve hot with any raitha.  



TIPS:

Any beans can be used instead black bean.

Mixed veggies can be added too.

Briyani masala can be added.  If so reduce red chilli powder and garam masala can be avoided.

I used green chillies as well red chilli powder.  If you are not using green chilli then 1 tsp of red chilli powder can be added.
