BAJRA ROTI / BAJRA BHAKRI / KAMBU ROTI


Bajra is a Hindi word for Pearl Millet in English and Kambu in Tamil.  Nowadays, am trying to cook more millet foods than our regular rice.  Often I make Bajra Dosa / Kambu Dosa and this roti was in my pending list.  This rotis are very popular in Gujarat.  This bajra has more nutritious value and very rice in fibre.  It helps in weight loss and very good for diabetics.  I made this roti very first time and I just loved it.  My kids had it without any side dish and they loved it.  I am planning to make some more dishes from Bajra so tune on!


INGREDIENTS:

Bajra flour           - 1 cup
Salt                      - as needed
Hot water            - as needed
Ghee / oil            - as needed (I used ghee)

HOW TO MAKE:

Boil the water and in a bowl add bajra flour and salt.  Add boiled water little by little and make a fine dough. 


Divide the dough into equal sized balls.  Grease the ziplock cover with ghee / oil and place one ball on the surface.  Place one more ziplock on the top and press gently with your fingers.  


Heat tava and drizzle some ghee or oil.  gently remove flattened bajra roti from the ziplock and place it on the tava.  Cook on the side and flip the other side to get cooked.  drizzle some more ghee / oil and gently press it on the top with the dry cleaned towel to cook evenly.  Cook till the brown spots appear on the sides.  Serve with any curry.  


TIPS:

Add hing, red chilli powder or masala with the flour and it is absolutely our choice.  

You can add 2 tsp of wheat flour since it is a gluten free.  I did not add wheat flour it just 100% bajra flour.
