SEEPU MURUKKU / SEEPU SEEDAI




Seepu Murukku / Seedai is a snack made with rice flour, urad dal, fried dal flour and coconut milk.  This traditionally made during Diwali and Krishna Jayanthi.  The different between our regular snack we using coconut milk here instead plain water.  My mom used to buy this murukku and I never knew its name.  It is very delicious and crunchy.  Only the rolling of murukku into cylinder is time taking process but still worth to it.  Try this yummy murukku / seedai for this Diwali 😊 



INGREDIENTS:

Rice flour           - 1 cup
Urad dal flour    - 1/4 cup
Fried gram flour - 1/4 cup
Coconut milk     - 1/2 cup
Butter                 - 1 tsp
Hot water           - as needed
Salt                     - to taste
Oil                      - for frying

HOW TO MAKE:

Dry roast urad dal and make a fine powder and make a fine powder of fried gram dal as well.  In a bowl take rice flour, urad dal and fried gram dal flour along with needed salt.  


Add coconut milk little by little and mix well.  Add hot water if needed and make a smooth and non sticky dough.  Take the murukku shape plate as shown in the picture.  


Grease the murukku press by little oil and fill little dough in the murukku press.  Start making long tapes on the clean surface and cut them into small strips as shown below.  Take a strip and put it around the finger and join the ends to make a cylinder shape.  Gently remove from the finger and place it separately.  Repeat the same till the dough gets over. 


Gently remove from the finger and place it separately.  Repeat the same till the dough gets over.  Heat oil in a deep kadai / pan and check if the oil is hot.  You can check the heat by dropping a pinch of dough in the hot oil.  If it raises immediately then the oil is ready for frying.  Start adding prepared seepu murukku / seedai and fry till golden brown.  You can add 7 to 8 at a time, or add as many you want depends on the vessel capacity.  Drain the fried seepu murukkus on the tissue paper to remove excess oil.  Allow to cool down and store in an airtight container.  


TIPS:

The dough should not be watery if it is dry then sprinkle some water.  Always keep covered the dough with wet cloth to keep moisturized.

It takes time to make all the seepu murukku one by one, but once it done, then can be fried continously.  

I used readymade rice flour.  Instead, you can soak the rice for 5 hours, then drain the water completely and dry them on the cloth for 30 to 45 mins.  Then make a fine powder and follow the other steps like mentioned. 

If the coconut milk is not enough then use the hot water.  

Do not over crowd the murukku while frying.  Add slowly one by one and flip carefully.

Make a long tape and then cut into pieces or make a small tapes.
