COUSCOUS WITH MIXED VEGETABLES | SPICY VEGETABLE COUSCOUS



Couscous is a type of North African Semolina in granules made from crushed durum wheat.  It's been a year that I wanted to make couscous dish after seeing this at my friend Vidya's place for lunch.  She made a delicious salad with big couscous pearls.  I loved it and was very curious what it could be!  When she replied that it was Couscous I said oh hmm!!😁 It was very crowded and I could not ask anything in detail but I have written in my mind that I should make it! Whenever I see couscous in the store was little hesitant to buy since I had no idea how to cook or I did not push myself to know even!  Last week I just bought it and seen some youtube videos and wow!!!!! there are so many couscous recipes!! 😱 Cooking couscous is just like making poha!  For poha we use the normal water but for couscous boiled water.  That is the only difference.  Finally I could make this yesterday and we loved it!  I did not want to make salad as this is the first time for my family to taste this!  Hence I decided to make it a spicy version of couscous with vegetables!  Thank you Vidya, for the wonderful salad and letting me know about this delicious couscous!

Couscous is full of nutrients that our body needs.  It is rich in vitamins and minerals and calcium, phosphorus, selenium, potassium, magnesium, folate among others.  It strengthen bones, muscles and immune system.  Try to add it in your regular diet as it also improves blood circulation.  




INGREDIENTS:

Couscous           - 1 cup
Water                 - 1 cup
Onion                - 1/4 cup finely chopped
Tomato              - 1/2 cup finely chopped
Green chilli       - 1 finely chopped (Or as needed)
Peas                  - 1/4 cup
Corn                  - 1/4 cup
Capsicum          - 1/4 cup
Turmeric powder - 1/4 tsp
Salt                      - as needed


TO TEMPER:

Oil                    - 1 tsp
Mustard seeds  - 1/4 tsp
Cumin seeds    - 1/2 tsp

HOW TO MAKE:

Boil two cups of water along with needed salt for couscous.  Turn off the stove and add the couscous.  Let the couscous get soaked for 6 to 7 mins.  


You can see the fluffy couscous in below picture.  Heat oil in a pan splutter mustard seeds add cumin seeds and onion and green chilli.  Fry till the onion transparent then add grated ginger and tomato.  Fry well till the tomato gets tender.  Add peas, corn and capsicum.  Let the vegetables gets tender and then add needed salt and turmeric powder.   Fry for two more minutes. 


Add fluffy couscous and blend well with the masala.  Serve hot!



TIPS:

Adding vegetables are absolutely your choice.

Couscous can be added in any form of salad.
