SABUDANA VADA | JAVVARISI VADAI | SABBAKKI VADE | SAGUBIYAM PUNUGULU


Sabudana Vada is one of the popular Maharashtrian snack recipe.  They usually make this during festival when they do fasting. They call it as "Vrat ka Khana".  Couple of years back I made SABUDANA KHICHDI which I learnt from my friend Hema Ashish.I did not add onion since I made it for Vrat post!  You can add the same ingredients for making this delicious vada if you want to make it for vrat days! Today I have added onion for making a masala vada 😎 It was super delicious & perfect for evening snack with Gharam Gharam Chai 😋😋😋



INGREDIENTS:

Sabudana / Javvarisi - 1 cup
Potato                        - 2 big
Onion                        - 1 finely chopped
Coriander leaves       - 1/2 cup finely chopped
Rice flour                  - 1 tsp
Red chilli powder     - 1 tsp
Turmeric powder      - 1/4 tsp
Cumin powder          - 1/4 tsp
Salt                            - to taste
Oil                             - for deep frying

HOW TO MAKE:

Soak sabudana for 4 to 5 hours to get soft and fluffy and drain the water fully.  Pressure cook potatoes, peel the skin and mash them.  In a bowl add mashed potato, sabudana, red chilli powder, turmeric powder, cumin powder, rice flour and along with needed salt. 


Mix well.  Heat oil in a deep pan / kadai.  Add a tsp of hot oil in the mixture and mix gently (Adding hot oil gives crispy texture).  Take a small lemon sized ball of mixture and gently flatten as shown in the picture.  Drop one by one in the hot oil and 4 to 5 vadas can be added in one batch or can be added more depends on the size of the pan / kadai.


Flip them on the other side and wait till the oil "Shhhh" sound ceases and the vadai turn in golden color remove from the oil.  Drain on the paper towel to remove excess oil.


Serve hot with Garam Garam Chai or Coffee as your choice 😋😋


TIPS:

For fasting days, onion and rice flour can be avoided.

Adding masala is absolutely your choice. 

Fried peanut powder can be added instead rice flour. 

Cumin seeds, ajwain seeds can be added too.

Green chillies or pepper can be added instead red chilli powder.
