INGREDIENTS:

Onion                     - 1 finely chopped
Tomato                   - 2 finely chopped
Ginger garlic paste - 1/4 cup
Cauliflower florets -1 cup
Capsicum               - 1 cup finely chopped
Potato                     - 2 cups chopped
Peas                        - 1/4 cup
Carrot                     - 12 cup
Pav Bhaji masala   - 3 tsp or as required (I used MDH masala)
Turmeric powder   - 1/4 tsp
Salt & water           - as required
Butter                     - 1 tsp
Coriander leaves    - 1/4 cup chopped

TO TEMPER:

Oil                          - 2 tsp
Cumin seeds           - 1 tsp

HOW TO MAKE:

Turn on instant pot in saute mode.  Heat oil, add cumin seeds.  Add onion & ginger garlic paste along with salt.  When onion transparent and the raw flavour goes add tomatoes, turmeric powder and Pav Bhaji masala powder. I used MDH Pav Bhaji Masala.

Mix well and wait till it form a thick gravy.  Meanwhile peel potato skin, and keep all the vegetables ready.  When it forms thick gravy add all the vegetables.  Add required water.   Do not add more water for the above said vegetables I have added 2 cups of water.

Close the lid and lock the vent.  Turn off the saute mode and on pressure cook mode.  Keep 9 mins in high pressure.  When it is done, the instant pot automatically will go to low pressure mode.  It can be opened once the steam released or release the pressure manually.  Release the seal and open the lid.

Mash the vegetables with potato masher or with the ladle.  Garnish with fresh chopped coriander leaves and add the butter.  Let the butter melt in the heat.

Serve hot with toasted bread with butter and topped with chopped onion, coriadner leaves.  Squeeze some lemon juice for nice and tangy flavor.

TIPS:

I used instant pot, if using pressure cooker,  first pressure cook the vegetables and mash well then follow the mentioned  steps till adding the masala.  Finally add mashed vegetables.

Adding vegetables are absolutely your choice.

In stores there are pav available, if not burger buns are very good substitute to the pav buns.

Onion & tomato can be ground instead adding chopped ones.
