SPICY APPAM VIDEO


INGREDIENTS:

Idli batter             : 2 Cups
Rice flour             : 1/4 Cup
Coriander leaves  : 1/4 Cup chopped
Red chilli powder: little (optional)
Cumin seeds        : 1/4 tsp coarse
Pepper                  : 1/4 tsp coarse
Turmeric powder : 1/4 tsp
Salt                       : to taste
Oil                        : for deep frying

HOW TO MAKE:

Take idli batter in the bowl and add all the ingredients except oil.  Mix well without any lumps and the consistency should be like neither thick nor thin.  Should be like Adai batter.  Make sure it is not watery as it result flat appam.  Heat oil in a kadai. 



When the oil is hot enough take a ladle of batter and slowly pour in the oil.  Wait for sometime about 30 seconds to get the appam set then add the second one.  Do not overcrowded them.  Depends the kadai size more appams can be added.  Do not flip the appam immediately as the appam may get loose and spread the batter.  Flip them slowly once the appam set well.  Keep stove in the medium heat so the appam get cook evenly.  



Fry them till brown and crispy.  Take out from the oil and place them on the paper towel to remove excess oil.  



Very crispy outside and soft inside.  Serve hot with ketchup or any chutney of your choice.



TIPS:

Appam can be made with fresh idli batter as well.  

Green chillies, ginger can be added for extra flavour.

Consistency should be neither thick nor watery.

Carrot / onion / spinach and other veggies can be added depends on your choice.
