BRINJAL STIR FRY | KATHIRIKKAI VARUVAL | EGGPLANT FRY


As I mentioned in my earlier posts, Brinjal is one of my favourite vegetable and I could eat this delicious veggie in any form 😋 This stir fry is very simple to make and tastes heaven.  Very easy and quick with simple ingredients and it goes very well with any rice like Sambar, Rasam or Curd and also with Rotis.  My mom makes this whenever she makes Morekuzhambu!! One of my favourite combo as well.  Today this is even more special to me as these brinjals are from my garden and purely organic 😍 Cooking our own homegrown veggies are priceless and scrumptious!  Try making this yummy, simple & tasty Eggplant Fry!

INGREDIENTS:

Brinjal               - 10
Sambar powder - 2 tbsp
Asafoetida         - 2 pinches
Salt                    - to taste

TO TEMPER:

Oil                    - 2 tbsp
Mustard seeds  - 1/2 tbsp
Urad dal           - 1 tbsp
Curry leaves     - few

HOW TO MAKE:

Cut brinjal lengthwise thinly and immerse in the bowl of water. This prevents brinjal not change its color.  Heat oil in kadai splutter mustard seeds, urad dal, curry leaves.  Saute till urad turn golden brown. 



Add chopped brinjal.  Saute and cook till it change its color and do not add water. 


Add sambar powder, asafoetida along with needed salt.  Stir now and then, and cook till brinjals are soft. 


Ready! Serve as side dish for lunch or for Rotis.



TIPS:

Potatoes, Drumstick, Bitter Gourd, Snake gourd & Okra can be cooked in the same way and try on other vegetables too.

Red chilli powder &  Coriander powder can be added instead sambar powder.

Do not add water and adding water will result too mushy brinjals.
