BABY POTATO FRY / SMALL POTATO FRY



This is a recipe I learnt from my Mom.  It is very easy and I wanted to post it in my blog for long time. Somehow I missed to click when I made many times.  Finally here it is  small / baby potato fry.  You can make it even with large potatoes and can cut into small pieces.  Here is the recipe without onions & tomatoes.  This recipe is bit different only with spice powders.  It was very good with sambar and rasam rice and my kids just loved it.  Hubby too :-)

INGREDIETNS:

Small / Baby potatoes - 15 to 20
Red chilli powder       - 1 tsp
Coriander powder      - 1 1/2 tsp
Garam masala            - 1/4 tsp
Turmeric powder       - 1/4 tsp
Asafoetida                 -  a pinch
Salt                             - as needed

To temper:

Oil                              - 1 tsp
Mustard seeds            - 1/4 tsp
Curry leaves               - few

HOW TO MAKE:

Pressure cook baby potatoes with enough water and allow 2 to 3 whistles.  Let the steam get released and allow the potatoes to cool down.  You can drain the hot water and put cold water to get the potatoes to cool down.  Peel the skin and keep aside.


Heat oil in a kadai splutter mustard seeds and add curry leaves.  Add red chilli, coriander, turmeric powder. Add asafoetida.  Mix it well and sprinkle water on it.


Add peeled baby potatoes and mix well without breaking the potatoes.  Let the potatoes roast well in the medium flame and slowly it will turn into golden brown here and there.


At that time sprinkle 1/4 tsp of garam masala and give it a mix.


Cook for 2 more mins and turn off the stove.  Serve with sambar or rasam rice.
