LAUKI KI SABZI / BOTTLE GOURD CURRY / SURAIKKAI CURRY


Lauki / Bottle gourd / Suraikkai curry is a Punjabi dish which is very good for health.  Bottle gourd helps in losing weight and it is very good for stomach.  This is an authentic Punjabi style dish which goes well with roties and rice.  Bottle gourd holds a special place in the Indian Ayurvedic medical system due to its health benefits.  It is advisable to have this vegetable once in a week.  

INGREDIENTS:

Lauki / Bottle gourd /
Suraikkai                     - 1 
Onion                          - 1 finely chopped
Tomato                        - 4 (Make it a paste)
Ginger                          - 2 tsp finely chopped
Red chilli powder        - 1 tsp
Coriander powder        - 1 1/2 tsp
Garam masala              - 1/2 tsp
Salt                               - as needed

To temper:

Oil                                 - 1 tsp
Cumin seeds / Jeera      - 1 tsp
Asafoetida                     - a pinch

HOW TO MAKE:

Peel lauki skin and cut into pieces.  Heat oil in a pressure cooker add cumin seeds grated ginger and asafoetida.  Add finely chopped onions and fry until it turn transparent. 


In a mixie / blender make a fine paste of tomatoes.  When the onions fried well add tomato puree. Blend well add red chilli, garam masala and coriander powder.  Mix well.  


Stir well and slowly it will form a thick gravy.  At that time add chopped lauki and blend with the gravy.  Add needed salt. 


Add a cup of water and cover the lid.  Pressure cook it with 2 to 3 whistles.  Once the steam released the subzi is ready to serve. 


Garnich with chopped coriander leaves.  Serve hot with roties and rice. 





TIPS:

This veggie has more water content hence do not add more water.  This curry / subzi supposed to be thick gravy.

Green chilli also can be added when you fry onions.  

Cumin powder will give an extra aroma and you can add 1/4 tsp of it.
