MARAVALLIKIZHANGU FRY / YUCCA ROOT FRY


A month before I have posted Maravalli Kizhangu chips and now I am here with fry dish which will go well with any meal or even can be eaten as a snack.  


INGREDIENTS:

Maravalli kizhangu/
Yucca root               - 1
Onion                       - 1 finely chopped
Green chilli              - 1 finely chopped
Turmeric powder     - 1/4 tsp

To temper:

Oil                            - 1 tsp
Mustard seeds          - 1/4 tsp
Urad dhal                 - 1/2 tsp
Asafoetida                - a pinch

HOW TO MAKE:

Wash maravalli kizhangu and cut into pieces like 2 to 3 inches size.  Pressure cook the pieces with enough water and with needed salt.  Allow 3 whistles.  Once the steam released peel the skin and cut into small pieces as shown in the below pic.  Keep aside. 


Heat oil in a kadai splutter mustard seeds add urad dhal and asafoetida.  Add chopped onions and green chilli.  Add turmeric powder.  Fry onions until it turn into golden brown. 


Add coooked maravalli kizhangu pieces and mix well with spatula without breaking the pieces.  Cook for 5 mins in low flame.  


Maravalli kizhangu fry is ready.


TIPS:

I have added salt when I pressure cook the kizhangu.  You can add salt even when fry it.

Red chilli powder can be added instead green chillies.

Add garam masala, coriander powder for different taste.
