VAZHAIPOO PORIYAL / BANANA BLOSSOM STIR FRY


One of my another favourite vegetable is vazhaipoo.  As I mentioned in my earlier posts, Vazhaipoo is a very healthy and tasty vegetable.  I rarely get this in Parivar (Indian Store), so whenver I get to see this immediately I get one.  Cleaning of this vazhaipoo is a big process, but coz of its health benefits I never avoid to make this.  Since it is time consuming, I always cut this after finish my all works and will finish it off before my kids comes from school.  I have posted Vazhaipoo Vadai and Vazhaipoo Sambar now I am here for posting this proiyal recipe.  It is very easy and as I told you only cleaning is a big process.  Try this recipe and enjoy this healthy vazhaipoo poriyal :-), will post some interesting recipes of vazhaipoo soon  :-)

INGREDIENTS:

Vazhaipoo           - 1 
Moongdhal          - 3 tsp
Grated coconut    - 2 tsp
Turmeric powder - 1/4 tsp
Salt                       - as needed

To temper:

Oil                         - 1 tsp
Mustard seeds       - 1/4 tsp
Urad dhal              - 1 tsp
red chillies            - 2 break into pieces
Asafoetida / Hing - a pinch
Curry leaves         - few

HOW TO MAKE:

Clean vazhaipoo and chop finely.  Click here for view the process for cleaning.  Vazhaipoo Sambar.
Put the chopped vazhaipoo in a bowl of butter milk to avoid the vazhaipoo get black.  


Heat oil in a kadai splutter mustard seeds add urad dhal.  Add asafoetida and red chillies.  Add curry leaves.  Drain vazhaipoo and add in the kadai.  Wash moongdhal and add with vazhaipoo along with turmeric powder and needed salt.  Mix well and add a cup of water.  


Let the vazhaipoo get cook well and add water if needed.  Stir well until the water evaporates.  Add grated coconut and mix well.  Turn off the stove.



TIPS:

Cook vazhaipoo in a cup of water along with turmeric powder and salt.  Drain the water and season with the "to temper" ingredients.  I cook directly coz I do not want to drain the soup.  

Moongdhal is an optional and you can avoid.
