CORIANDER POTATO FRY / HARIYALI ALOO FRY



Kids love potato and ofcourse my kiddos too :-)  I always try to make different recipes on potatoes for my kids.  Last week I bought fresh bunch of coriander leaves and when cleaned, it sparkled me to use this leaves while I make potatoes.  It was yummmm, wowww and was delicious with Arisi Paruppu Sadam.  Kids just loved it. Try this coriander potato fry and it's different :-)


INGREDIENTS:

Potato                   - 10 to 12 small potatoes
Coriander leaves  - 1/4 bunch
Green chillies       - 2
Turmeric powder - 1/4 tsp
Salt                      - as needed

To temper:

Oil                       - 2 tsp
Mustard seeds     - 1/4 tsp
Cumin seeds        - 3/4 tsp
Asafoetida           - a pinch


HOW TO MAKE:

Peel potatoes skin and cut into pieces.  I cut into straight thin slices and it's absolutely your choice how the pieces should be.  Heat oil in a kadai splutter mustard seeds add cumin seeds.  Add curry leaves and asafoetida.   Add potato pieces and blend well.  Let the potato get fried and cooked. Sprinkle water now and then and do not add more water.   When it is half done add needed salt.  


Meanwhile, in a mixie / blender add coriander leaves and green chillies.  Make a fine paste by adding little water.  Once the potato cooked add grounded coriander paste.  Add turmeric powder.  Blend well without breaking the potatoes.  


When it get fried well turn off the stove.  Serve with any rice variety :-)




TIPS:

Try with mint paste and it will be different too.

Add garam masala and coriander powder for more flavour.  

Pressure cook potatoes and then do seasoning and add grounded paste.  That method also can be followed.
