AVOCADO BEAN SALAD




Got inspired on this delicious salad through my friend Anjana, who made a Mexican lunch one weekend.  I love Mexican food and my family as well.  Lunch was so delicious, light and refreshing.  I was eating "n" bowls and not even felt sorry about it 😋  As a result I have added Mexican recipes list to my blog.  Guys, stay connected to get more scrumptious delicacies.  

It is so easy to make that you do not even require the stovetop!  You can make a healthy and delicious salad in 5 mins.  Fresh creamy avocado, tomato, red onions, black beans, cilantro and a tangy lemon dressing with olive oil.  It's an yummy salad for a healthy meal!  For vegan lovers, it is an awesome and wholesome food!  Let know your vegan friends and family about this and enjoy the wholesome food treat!  Yummm!!!  I could eat this all days along!! 😁



INGREDIENTS:

Avocado        - 2 cups diced
Black bean     - 1 tin
Red onion      - 1 finely chopped
Tomato           - 1 finely chopped
Lettuce           -  1 cup chopped
Black pepper  - 1/2 tsp ground
Lemon juice   - 2 tsp
Olive oil         - 2 tsp
Salt                 - 1/2 tsp or as needed


HOW TO MAKE:

Take all the ingredients in a large serving bowl except olive oil and lemon juice.  



Add lemon juice and olive oil.   Toss well to combine.



Mix well with spatula and serve fresh or keep in a fridge.  Serve alone or with chips / tortilla chips / pita!



TIPS:

Add sweet corn, cucumber and capsicum for making it more colorful and healthy.

Taco shells can be added before serving.
