WATERMELON RASAM | WATERMELON SOUP - HOW TO MAKE WATERMELON RASAM

WATERMELON RASAM - Interesting isn't it!!! Yes, when I saw the post in my friend's facebook page, I was so surprised how it could be possible. A group member shared Mountbatten Mani Iyer's recipe and I could not resist to make it - it was amazing!  I have modified the recipe as per my taste, and of course, for my family's 😉 My family loved it, but I did not tell them what it was made of, coz my kids may not have shown any interest. I told them once they finished eating and they wondered how I could have possibly made it with watermelon! 😎

Since it is watermelon season, we could make something different like this soup / rasam.  Trust me, this is super delicious and no one can say no this scrumptious rasam!  It was very yummy with rice and it can be drunk as soup as well.

INGREDIENTS:

Watermelon juice - 2 cups
Tamarind              - gooseberry sized
Toor dal water      - 1 cup
Turmeric powder - 1/4 tsp
Curry leaves         - few
Coriander leaves  - 3 tsp chopped
Salt                       - as needed

TO GRIND:

Pepper                 - 1 tsp
Cumin seeds        - 2 tsp
Red chillies         - 2 to 3
Garlic cloves       - 5 to 6

TO TEMPER:

Ghee                   - 1 tsp
Cumin seeds       - 1/2 tsp
Asafoetida          - 1/4 tsp

HOW TO MAKE:

Grind watermelon and extract 2 cups juice.  Soak tamarind for 20 mins in a cup of water, and extract the juice.  For toor dal water, when you cook toor dal for sambar, extract a cup of toor dal water and keep aside.  Make a coarser powder of "TO GRIND" ingredients.

In a bowl, add tamarind juice, curry leaves, turmeric powder, coarse powder, toor dal water, chopped coriander leaves and needed salt.  Heat ghee in a deep vessel / pan add cumin seeds and asafoetida.  Pour the tamarind mixture and allow to boil.

When it starts boiling add the watermelon juice.  Allow to boil and turn off the stove.  Can be drunk as soup / serve with hot rice.

TIPS:

Chopped onion and tomatoes can be added.

Green chillies can be added instead red chillies.

Instant rasam powder can be used too!  If so add instead "TO GRIND" ingredients.
