FRIED PHOOL MAKHANA | FRIED FOX NUT | SPICY FRIED LOTUS SEEDS


Phool Makhana - Unique name isn't it!!!  I have no idea about this super healthy snack until I heard from my friend Anamika.  Phool Makhana is also called Lotus seeds or Fox Nut which has lot of medicinal values.  China is using this lotus seeds in many medicines and in our country they are using for Ayurvedhic medicines.  It has lot of health benefits - which is good for heart disease,  diabetic control, helps in weight loss, high in vitamins & minerals.  Instead munching our regular snacks, we should definitely add this healthy snack often.  Thank you Anamika for letting me know about this wonderful snack and it was super delicious! 😋


INGREDIENTS:

Phool Makhana - 2 cups
Peanuts              - 1/4 cup
Dried Cranberry- 1/4 cup (Craisins)
Red chilli powder - 1/4 tsp
Turmeric powder  - 1/4 tsp
Asafoetida            - 1/4 tsp
Kalonji seeds       - 1/4 tsp
Curry leaves        - few
Salt                      - to taste
Oil                       - 1 tsp

HOW TO MAKE:

Dry roast pool makhana in a kadai until it get roasted well.  Check by breaking phool makhana by pressing gently and it should get break and should be crunchy.  It shows that it is ready and once it is roasted keep aside.


Heat oil in a same kadai (or another) and roast peanuts till it get golden brown.  Add curry leaves, red chili powder, turmeric powder, asafetida, kalonji seeds and needed salt.  Blend well and add dried cranberries.  Mix them well.


Add roasted makhana and blend well with other ingredients.  Check and add salt if needed.  Once it cooled down store it in an airtight container.  Enjoy munching!

TIPS:

Adding nuts absolutely your choice and any nuts can be added or can be made without nuts too.

Fried onion and garlic can be added as well.

Fry until makhana get roasted else will result very soft.
