SOMAS | SOMASI | KARANJI


SOMAS - One of my favourite sweet which pertains a good amount of childhood memories.  I just love the stuffing to the core.  When I was in elementary we lived in Srirangam.  Our neighbor Aunt makes Murukku, Somas & Burfi for sale.  Whenever holiday starts, I just stay there with Sambu Athai (Thats how we call her) from morning till evening.  I help her in packing burfis & somas.  Literally, when I make it today, it took me back to the days when I enjoyed seeing Sambu Athai making the above items.  Her mom also live with her and that Aachi (Grandma) used to take the bags to all the shops to deliver the sweets & snacks.  
I still remember my Appa (dad) used to buy this somas from Teppakulam shops and there was one more small stall near Mangal & Mangal and in front of the huge complex a lady would stand inside the tiny stall sell this Somas, Athirasam & other sweets . So that's the story of why I love this sweet so much. 😍.  Looking at it seems very difficult, but I would say it is a very easy and simple recipe.  Try for this Diwali and trust me you love this yummilicious Somas 😋



INGREDIENTS:

Maida / All Purpose flour - 1 cup
Rava                                  - 1/4 cup
Ghee                                  - 1 1/2 tsp
Salt                                    - a pinch
Water                                 - as needed

For stuffing:

Grated coconut                  - 1/2 cup
Fried gram dal                   - 1/2 cup
Sugar                                 - 1/2 cup
Cardamom                         - 2

HOW TO MAKE:

First, lets see how to make stuffing.  Dry roast the grated coconut remove the moisture.  Roast till golden brown.   Remove from the flame & allow to cool down. Next power, fried gram dal and it need not to be very fine powder, coarse should be fine.  As well powder sugar & cardamom together and keep aside.


Once the roasted coconut cooled down, in a bowl add ground fried gram dal, sugar & cardamom along with roasted coconut.  Make sure that the roasted coconut is cooled fully.  Stuffing is ready.

In a bowl take maida / all purpose flour, rava, ghee & pinch of salt.  Mix well and make it as crumbs so that everything will get mix evenly.  Add water little by little and make a fine dough.  Rest the dough for 2 hours.  


After 2 hours, knead the dough for 15 to 20 mins, and now you can see the fine & smoothy texture of the dough.  Make equal sized small balls out of it.  Dust the ball in the flour and make a very thin circle as shown in the picture below.  The circle should be very thin, it gives nice & crisp somas.  Keep a tsp or 2 stuffing mixture in the middle of the circle.  Add stuffing depends on the size of the circle.  


Apply water on the edges and bring top edge to the bottom as shown below.  Use the pizza cutter or knife to cut the edge.  You can also twist the edges to make the shape.  Keep all the somas ready by adding stuffing inside.  Heat oil in a kadai and drop prepared somas one by one.  Do not over crowded it may break.  


As mentioned earlier, knife can be used to cut the edges and use the fork to make the design as shown below.  Fry in medium flame, so that it cook inside and outside evenly.  When the oil sound reduces remove somas from the oil and place it on the paper towel to remove the excess oil.



Allow to cool down and store it in an air tight container.  Enjoy munching 😋


TIPS:

Knead the dough atleast for 20 to 25 mins to get the fine and smooth dough.

Corn flour can be added instead rava.

Hot oil can be added instead ghee to make the dough.

Adding nuts in the stuffing is absolutely your choice.

As mentioned earlier, the oil should be hot enough and at the same time, it should be on the medium flame while frying.  Frying in medium flame helps the somas to cook evenly outside as well inside.
