ALOO PURI | POTATO PURI | URULAIKIZHANGU PURI | ALOO POORI




Aloo Puri / Poori is a perfect breakfast or dinner recipe which tastes super scrumptious.  This has little variant by our regular puri as adding potato in it. It is prepared by adding mashed potatoes and few other ingredients in the wheat flour.  This poori need not have any side dish as it can be consumed as it is.  Make this yummy puris for your guests and will be awesome.  



INGREDIENTS:

Wheat flour            - 2 cups
Potato                    - 1 medium boiled
Ajwain seeds         - 1 tsp
Red chilli powder  - 1/2 tsp
Turmeric powder   - 1/4 tsp
Coriander leaves    - 2 tsp chopped
Oil                          - for deep frying
Salt                         - to taste
Water                      - as needed

HOW TO MAKE:

Boil potato, peel the skin and mash well without any lumps.  Add wheat flour, ajwain seeds, red chilli powder, turmeric powder, coriander leaves and salt.   


Mix well without adding water and make it crumbs then add water little by little and make a fine dough.  Add a tsp of oil for making not sticky dough.  Cover with wet cloth and keep aside for 20 minutes.



Knead the dough again and make equal sized balls.  Dust very little flour and start making circle.


Do not make thin as it will not puff & do not make thick either.  Heat oil in a deep pan / kadai and the oil should be enough to get immerse to puri. Drop the puri and cook both sides.



Gently press the puri with ladle in the oil this will make puri to puff well. Flip and cook until golden spots appear on the puri.


Serve hot to eat puffed puri :-) Puri Potato Masala is the best combo for puri / serve with any curry.


TIPS:

There should be enough oil to immerse the puri.  

Cumin seeds can be added instead ajwain.  

Do not dust more flour when making the circle, more flour will get separate in the oil and that may get black spots in the oil.

Fenugreek leaves can be added instead coriander leaves.

For puff puri, the oil should be hot enough and while frying keep in medium flame.
