IDLI MILAGAI PODI | CHUTNEY POWDER | IDLI KARAM PODI


Most of us would love to have Idli Podi handy which is always spares extra few minutes in grinding chutney or making sambar for Dosa / Idli.  This podi is packed with proteins and nutritious too.  Very simple to make and trust me once you start making this podi at home you will never turn to store bought one 😋😋😋 With this one podi we can make, Podi Idli, Podi Dosa and can be used as masala powder for Vazhaikai fry & other subzi's as well.   This is so special podi for me coz this is my Mom's recipe 💕 . I remember my Sister-in-law Vino add jeera & coriander seeds, which I will try and post soon.  

I just love the flavor of hing in this podi and it is the best along with topping of gingelly oil.  Kids will love with Ghee topping 😀 Adding red chilli can be reduced or increased depending on your spice level.  I personally love coarse texture also little darker in color.  If you want fine powder then powder it finely but grinding dals finely will result pale in color.  





HOW TO MAKE IDLI MILAGAI PODI STEP BY STEP:

INGREDIENTS:

Urad dal            - 1 Cup
Channa dal        - 1 Cup
Peanuts             - 1/2 Cup
Sesame seeds   - 1/4 Cup
Red chillies      - 1 1/2 Cups
Hing                 - 1/4 tsp
Salt                   - as required

HOW TO MAKE:

Dry roast Urad dal & channa dal till golden brown.  Dry roast peanuts.  Blow peeled skin. 


Dry roast sesame seeds till golden brown.  Roast red chillies till color changes.  Allow roasted ingredients to cool down.  




In a mixie grind red chillies, hing & salt coarsely.  Add other ingredients and grind powder them coarsely or finely.  Once it cooled down store it in an airtight container. 


Serve with Idly / Dosa topping with gingelly oil or ghee.



TIPS:

Adding peanuts and sesame seeds is absolutely your choice. 

Garlic lovers can add 2 to 3 cloves after dry roasting them.
