One pot rice is always my favorite and coconut milk rice is one among them. This is such a flavorful variety rice prepared with coconut milk and other spices - always a win win dish when we run out of vegetables! Trust me this will push you to make it often coz of the flavor and taste. I got this from my friend Ganga - Thank you for the scrumptious recipe darling😍 Though I make this often I always miss capturing it. After two weeks off in the kitchen and no vegetables in the fridge, I decided to post and enjoy it

STEP BY STEP COCONUT MILK RICE:

INGREDIENTS:


Seeraga Samba Rice - 2 Cups 
Coconut milk            - 2 Cups Medium thick
Onion                      - 1 Big chop lengthwise
Green Chili               - 10 
Ginger Garlic paste   - 10 / Add as required 
Cashews                  - 1/4 cup 
Ghee                       - 2 tbsp 
Cinnamon Stick        - 4 small pieces 
Bay leaf                   - 3
Cloves                     - 3
Star Anise                - 2 
Cardamom               - 3 
Dagad Phool             - small piece 
Fennel Seeds            - 1 tsp 
Water                       - 3 cups

HOW TO MAKE:

Wash and soak Jeeraga Sambar rice for 15 minutes. Turn saute mode in instant pot.  Heat 2 tbsp of ghee.  Add cinnamon stick, bay leaf, cloves, star anise, cardamom, dagad phool and fennel seeds along with cashews.  Saute and fry until cashews are golden brown.  Add chopped onion, crushed ginger garlic and green chili along with needed salt.  Saute until onion translucent. 


Mix well. Add soaked rice and mix well (Drain the water). 


Add medium thick coconut milk and water.  Adding water vary depends on the rice you use so add accordingly.  Mix well and cover the lid.  Make sure the seal is on.  Pressure cook for 7 minutes in high pressure.  


Once done natural release.  Mix gently.  Rice texture may vary depends on the rice.  


Thengai Paal Sadam is ready to serve.  Serve hot with any raita or salan of your choice.  


TIPS:

Basmati rice, sona masoori or any rice can be used instead jeeraga samba rice. 

If you have thick coconut milk dilute with water and bring to medium thickness.  Adding thick coconut milk may yield too oily / mushy texture.  

This rice does not need any vegetables but adding vegetables are absolutely your choice. 

Green chili is the main ingredient for the spice so add according to your taste bud.  

Do not add red chili or garam masala or any other spices as this dish is not containing any of those.
