STEP BY STEP SOYA CHUNKS MASALA:

HOW TO MAKE:

INGREDIENTS:

Soya Chunks - 2 cups 
Onion - 1 big - finely chopped
Tomato paste - 2 cups - Grind into a paste
Ginger garlic paste - 1 tbsp 
Cashew paste - 1/4 cup 
Red chili powder - 1 tsp 
Coriander powder - 2 tsp 
Garam masala - 1/2 tsp 
Kasuri methi - 2 tbsp 
Bay leaves - 2 
Cinnamon stick - small piece
Cumin seeds - 1 tsp Salt - to taste 

TO MARINATE: 

Curd - 1/4 cup 
Turmeric powder - 1/4 tsp 
Lemon juice - 1 tsp 
Salt - to taste

HOW TO MAKE:

Take 5 to 6 cups of water in a pan along with 1/4 tsp of salt. Bring to boil and turn off the stove. Add soya chunks. Leave it for 8 to 10 minutes.

 

Drain off from the hot water and put them in a cold water.  Drain them and squeeze excess water and keep aside.

Transfer soya chunks to a bowl, add curd, turmeric powder, salt and lemon juice. Combine and coat well.  Marinate for 30 minutes.

 Grind cashews into a fine paste and keep aside. 



 

Heat oil in a kadai, add bay leaves, cinnamon stick and cumin seeds. Add chopped onion, ginger garlic paste and needed salt. Remember we added little when we marinated the soya chunuks so add carefully.


Saute well and cook until translucent. 

 
Add tomato paste, red chili powder, Coriander powder, garam masala, kasurti methi and turmeric powder.


Combine well and cook for 5 to 10 minutes until the oil separates the pan.


Add marinated soya chunks along with water for needed consistency. I have added 2 cups.

 

Combine well and bring to boil. Add cashew paste. Add little more water and combine well.

Cover and cook for 10 minutes in a medium flame.

Soya Chunks Masala is ready. Garnish with fresh coriander leaves.

Serve hot with rice or roti of your choice.


TIPS:

Poppy seeds can be added along with cashews. 

Potatoes, peas and other vegetables can be added along with soya chunks.
