CORN IDLY / INSTANT CORNMEAL IDLY


Idly and dosa are the most popular breakfast from South India. I wanted to try different kind off idlies and I have posted Oats idly couple of months back.  Idly tikka is my different version and I got so many response from my friends and readers.  Its long time plan that I wish to make corn idly and a month back I totally forgot and I made corn kichadi :-)  That was delicious and we liked a lot.  

Cornmeal contains lot of nutrients and its loaded with many health benefits.  It's an excellent source of vitamin B1 & B5.  It is gluten-free and beneficial for managing diabetes.  This is an instant idly like we do for rava idly which require no preparation :-)  Last week I bought this broken corn and this time without forget I made Corn idly :-)  

INGREDIENTS:

Broken corn        - 1 cup
Curd                    - 1 cup
Coriander leaves - 3 tsp finely chopped
Soda salt or eno  - 2 pinches
Salt                      - as needed

To temper:

Oil                       - 1 tsp
Mustard seeds     - 1/4 tsp
Urad dhal            - 1/2 tsp
Channa dhal        - 1/2 tsp
Green chillies      - 2 finely chopped
Grated ginger      - 1 tsp
Asafoetida           - a pinch

HOW TO MAKE:

Make a coarse of corn like rava by using mixie or blender.  In a bowl add coarsely grounded corn, curd and salt.  Mix well. 


Keep the mixture aside for 30 mins.  Heat oil in a kadai splutter mustard seeds, add channa & urad dhal, chopped green chillies, grated ginger and asafoetida.  Fry until the dhal turn into golden brown. Add seasoning in corn mixture.  Add two generous pinches of soda sat and finely chopped coriander leaves. 


Mix well nicely and if needed add water to get idly batter consistency.  Grease idly plates and pour a ladle of batter in each whole.  Steam cook it in idly vessel for 15 mins.  


Once it cooked use a spoon and take out idlies one by one.  


Soft and smooth corn idly is ready.


TIPS:

Add grated carrot, peas or capsicum for making corn vegetable idly.

Add only less soda not too much.  

The consistency should be like idly batter consistency.
