THANDAI


Thandai is a milk based drink and it is very popular in North India made during Holi festival.  For last year Holi I wanted to post this recipe and I just missed it.  I do not want to miss this year and I was keeping an eye to post this recipe before the festival.  Already the bloggers are started to posting this recipe and today here I am for this cooling drink :-)   It is a refreshing drink and especially for this summer it is very good to keep our body cool.  My kids just loved it and they wants me to make it often :-)  Am sure that I am going to make it often.  Enjoy this yummy drink often and keep your body cool on this summer :-)

INGREDIENTS:

Milk                  - 3 cups
Sugar                 - 6 tsp
Saffron              - 2 pinches
Almonds           - 20
Fennel seeds     - 1 tsp
Poppy seeds      - 1 tsp
Cardamom        - 2
Pepper               - 10 

HOW TO MAKE:

Soak all the ingredients in water about 30 to 40 mins.  


Boil milk and allow to cooled down and add sugar into it.  Take 2 tsp of milk in a bowl and add saffron into it.


Peel of almonds skin and grind along with other ingredients.  Make a fine paste of it.  


Mix the grounded paste in to the milk and keep aside for 15 mins.   


Strain it.  Add saffron milk which we kept in the beginning.  Mix well.


Refrigerate it for an hour.  Garnish with crushed pistachios.  Serve chilled.  


TIPS:

Add rose essence to give a flavour and it is an optional.

I used fat reduced milk and whole milk also can be used.
