SPICY DIAMOND CUTS / SPICY MAIDA BISCUITS


Vacation started here and my kids already started searching snacks in my pantry.  My son is a snack lover that too savouries.  Maximum I avoid to buy snacks form stored ones and always I try to make homemade snacks.  It's healthy right!  When I was thinking to make some snack for this vacation, I would say that this one is easy to make and simply tasty snack too.  You can make this awesome snack for Diwali too.  You can make it in sweet version too and recipe will be on soon...

INGREDIENTS:

Maida / All purpose flour - 1 cup
Red chilli powder             - 1 tsp
Turmeric powder              - 1/4 tsp
Garlic paste                       - 3/4 tsp
Ajwain / Omam                - 1/2 tsp
Asafoetida                        - 2 generous pinches
Melted butter                    - 2 tsp
Salt                                    - to taste
Oil                                     - for deep frying

HOW TO MAKE:

In a bowl mix red chilli powder, turmeric powder and garlic paste by adding litter water.  Make a paste of it.  (Add 3 tsp of water)  In a bowl add maida flour, ajwain, asafoetida, melted butter and needed salt.  Add the red chilli mixture.  Make a soft dough by adding water little by little.  The dough should be like chapati dough and it should be soft not sticky.   Add little oil to make a fine dough.  Cover the dough and keep aside for 15 to 20 mins.  Knead the dough and make 5 to 6 equal size balls of it or separate the dough into batches.  


On a clean surface, roll it and make a thin circle.  Dust it on the flour if needed to avoid the circle stick on the surface.  I missed to click the pic of it, and will paste the pic when I make next time.  
Meanwhile heat oil in a deep kadai / pan.  Make diamond shapes by using pizza cutter or a knife. You can cut it in square shape too.  Separate the pieces as shown in the pic below.  


Fry the diamond cuts and fry till it turn in to golden brown and until the oil sound ceases.  


Remove form oil and drain it on the paper towel.  Allow to cool down and store it in an airtight container.  



TIPS:

Wheat flour can be used instead maida.  

Garam masala powder can be added.  

Make sugar syrup or add sugar powder to make sweet diamond cuts.  

Do not add more water and the dough consistency supposed to be very soft and smooth.
