SWEET LASSI



Sweet Lassi is an another cooling and refreshing drink to have in the summer.  My grandma used to give me thick curd with a tsp of sugar and I just enjoyed in my childhood days.  I still remember that, very first time I had sweet lassi in Shanthi Sagar restaurant, Trichy with my mom.  I just loved it.  But I never had it often and only in summer I used to have in Coimbatore.   When I surfed about this recipe, I came to know that this is a traditional summer drink in Punjab.  There are three versions of lassi that is sweet, salted and masala.  During summer, this lassi is a very good drink and instead stored juice this is very healthy for kids.

INGREDIENTS:

Chilled thick curd             - 1 cup
Chilled milk                       - 1/4 cup
Sugar                      - 3 tsp
Cardamom powder - a pinch
Rose water              - 1 tsp
Saffron                    - a pinch for garnishing (optional)

HOW TO MAKE:

In a mixie / blender mix all the ingredients except saffron and give a gentle strokes for 30 sec to 1 min.


Transfer to the serving glass.  Serve chilled.




TIPS:

Saffron for garnishing is optional.

You can use rose essence instead rose water.  Use only 1/4 tsp of it.  Either rose water or essence can be used.

Crushed or cubed ice cubes can be used.  I used refrigerated milk and curd hence I did not add ice.
