SURAIKAI SAMBAR / BOTTLE GOURD SAMBAR / LAUKI SAMBAR


This is one of my favourite sambar which my Amma makes.  My mom makes this sambar often and now me too coz of its healthy benefits. I just love this sambar and it has a peculiar taste.  It goes well with rice also with Idli, Dosa.  This sambar tastes too good on the next day so I always make lot and pack some for next day :-)  It contains many vitamins and minerals, such as calcium, magnesium, phosphorus, Vitamin A & C.  It helps for weight loss especially the juice.  It is extremely popular for reducing high blood pressure and keeping your heart healthy.  Have this bottle gourd atleast weekly once and stay healthy.  


INGREDIENTS:

Suraikai / Bottle gourd - 1
Toor dhal                      - 1/2 cup
Onion                            - 1 finely chopped
Tomato                         - 3 finely chopped
Sambar powder            - 2 tsp
Turmeric power           - 1/4 tsp
Salt                               - as needed

To temper:

Oil                               - 2 tsp
Mustard seeds             - 1/4 tsp
Fenugreek seeds          - 1/4 tsp
Asafoetida                   - 2 pinches

HOW TO MAKE:

Pressure cook toor dhal  with a cup of water and allow 3 to 4 whistles.  Mash well and keep it ready. Heat oil in a kadai splutter mustard seeds add fenugreek seeds and asafoetida.  Add chopped onions and fry well until it transparent.  Meanwhile peel bottle gourd skin and cut into cubes.  


Add chopped tomatoes and bottle gourd pieces.  Mix well and add sambar powder and turmeric powder.  


Blend well and add a cup of water and needed salt.  Let the suraikkai get cooked well then add cooked toor dhal.  Allow to boil and cook for 5 more mins in medium flame.  Turn off the stove.  


TIPS:

Tamarind juice can be added.  If so, then reduce one tomato otherwide sambar will be soar.  

You can fry suraikkai with onion then tomato can be added too.
