NEI BISCUIT / GHEE COOKIES / BUTTER BISCUIT / NANKHATAI / NAN KHATAI - EGGLESS COOKIES




I never knew that I make this delicious cookies at home!  Yes....One of my favourite childhood biscuit which I just love to the core.  In India, we get variety of butter biscuits in many flavours.  This one is the basic ghee biscuit which we can make it with three ingredients which is readily available all the time.  Yesterday I spoke to my friend Kani and was asking about what she is gonna make for this Diwali.  When she said, Nei (Ghee) biscuit I was very curious how she could make it at home.  I asked her the recipe and I could not resist myself making it on the same day.  I just grab all the three ingredients from my pantry and I started making it.  I was little nervous coz, am not as good in baking like my daughter Adithi :-)!  I just wanted to make it in a small quantity and what I can say!!!!! Yippeeeee!!!!! It was super perfect and delicious.

INGREDIENTS:

All purpose flour / Maida - 1 cup
Powdered sugar                - 3/4 cup
Ghee                                 - 1/2 cup melted
Baking soda                     - a pinch
Salt                                   - a pinch

HOW TO MAKE:

Preheat oven 350 Degree F.

In a bowl add ghee, powdered sugar, salt and baking soda.  Whisk well until it form a nice creamy texture.  It take 10 mins to get the creamy texture.  Add all purpose flour / maida and mix well.  


Make a soft non sticky dough.  Take a little dough and make a small ball and do the same for the rest of the dough.  


In a baking tray place all the balls and flatten it just pressing gently on the top.  Keep it in the oven and bake it for 15 mins till the cookies are done.  


Remove the tray from the oven and allow to cool down.  Once they are cooled down store it in the airtight container.
