ALMOND METHI PARATHA | BADAM METHI ROTI | FLAT BREAD WITH FENUGREEK LEAVES


Almond Methi Paratha - Interesting isn't it!  When I saw this almond flour at Costco, I never thought of buying it.  My friend's MIL bought these when she went to India and I was very surprised what is it for??  When Renuka Aunty told me that it can be diluted with water and can be used for all the curries, I was astonished!   I was using only grounded cashew or corn flour to thicken the curries till date. The next day I bought almond flour from Costco ðŸ˜‚.  This is how I started using this ðŸ˜„ Using this for rotis is a different story!  One of my friends, Shrividya, mentioned in her facebook page that she made Almond roti without adding wheat flour!  I have picked that idea and started making roti / chappathis by adding 1/4 cup of flour (though not completely)with a cup of wheat flour.  

As almonds contain lots of healthy fats, fiber, protein, magnesium and vitamin E, its now in our regular diet and at-least thrice am making rotis.  It controls our blood sugar levels ,also reduce hunger and promote weight loss.  Try to add almond flour in your regular diet to get the above benefits!



INGREDIENTS:

Almond flour        - 1 Cup
Wheat flour          - 1 Cup
Methi leaves         - 1 cup
Red chilli powder - 1 tsp
Turmeric powder  - 1/4 tsp
Oil / Ghee             - 2 tsp
Salt                        - as needed

HOW TO MAKE:

Take almond and wheat flour in the bowl along with all the above mentioned ingredients.  Mix well!



Add water little by little and make a fine dough.  Cover it with wet cloth and let the dough rest for 30 minutes.  Make equal sized balls out of it.  Take a ball and dust some flour to make a thin roti / paratha


Make a thin or thick roti / paratha by using the roll pin.  Heat roti tawa and place one paratha when the tawa is hot enough.  Grease little or ghee on the top of the paratha and cook.  When it starts bubbling flip it on the other side to cook evenly.  


Serve hot paratha with any choice of curry / curd / pickle.


TIPS:


Add spinach instead methi leaves to make spinach roti / paratha.

Only almond flour can be added too.

Adding ghee or oil is optional.

Butter can be added while mixing the flour, if you adding butter then avoid adding oil or ghee.

For making more spicy chopped green chilli or green chilli paste can be added.  Coriander powder can be added too.

Ajwain can be added for more flavour
