KATHIRIKKAI KOOTU | BRINJAL MOONG DAL FRY | KATHIRIKKAI KOOTU IN INSTANT POT

INGREDIENTS:

Brinjal                 - 5 - 6 medium
Moong Dal          - 1 Cup
Turmeric powder - 1/4 tsbp
Asafoetida           - 2 pinches
Curry leaves        - Few
Water                   - 3 Cups
Salt                      - to taste

TO TEMPER:

Ghee                   - 3 tbsp
Cumin Seeds      - 1 tbsp
Black Pepper      - 1 tbsp crushed
Crushed Garlic   - 2 tbsp
Red chillies        - 2 to 3

HOW TO MAKE:

Cut brinjal into cubes.  Turn on instant pot on saute mode.  Heat ghee add cumin seeds, crushed black pepper, crushed garlic and red chillies.  Saute them for a minute and add brinjal.  



Mix well, turn off saute mode.  Add Moong dal, curry leaves, asafoetida, turmeric powder and needed salt.  Mix well. 


Add 3 cups of water and mix well.  Lock the lid, seal on and pressure cook 5 minutes.  Once it is done force to release or wait till pressure to come down.  


Kathirikkai Kootu is ready!!


TIPS:

Coconut paste can be added made of grated coconut, cumin seeds and black pepper. 

Adding garlic is absolutely your choice.  

Try making the kootu with other veggies like Beans, avariakkai, carrot, chow chow and cabbage.
