MAYO PASTA SALAD | CREAMY PASTA SALAD | MAYO SPAGHETTI SALAD


Quick & healthy salad ready in 20 minutes.  I made the sauce by Mayonnaise  which is made with avocado oil.  Thought of making spaghetti with Indian flavor but it turned scrumptious salad :-) . Sometimes the idea comes really quick and I always listened to that 😎  Try this delicious salad and let me know how you liked it 😃

INGREDIENTS:

Angel Hair Pasta / Any Pasta - 1 pack or as needed
Cucumber                               - 1/2 Cup
Corn                                        - 1/2 Cup
Tomato                                   - 1/2 Cup
Onion                                     - 1/2 Cup
Apple                                     - 1
Chia Seeds                             - 1 tbsp
Olive Oil                                - 1 tbsp
Salt                                         - to taste
Water                                      - as needed for cooking pasta

SALAD DRESSING:

Mayo                                     - 3 tbsp or as needed
Olive Oil                               - 1 tbsp
Lemon Juice                          - 1/2 tbsp
Dried Basil Leaves               - 1/2 tbsp
Balsamic Vinegar                 - 1 tbsp
Salt                                       - to taste

HOW TO MAKE:

Boil water in a big pot (take enough water).  Take Angel Hair pasta or any pasta of your choice.  


Break spaghetti into pieces and add in the boiling water.  


Add needed salt and a tbsp of olive oil and mix well.


Cook pasta until soft.  Drain the water completely and keep aside.  


For Salad dressing, in a bowl take Mayo ( I used Primal Kitchen's Mayo made with Avocado Oil) of your choice, olive oil, lemon juice, dried basil leaves, balsamic vinegar and needed salt.  Remember we added salt in pasta as well so add carefully.  Mix well and make a fine paste.  Salad dressing is ready.  


In a big bowl, take cooked pasta along with all the vegetables and apple.  Any salad veggies can be added of your choice.  Spread salad dressing and add as required.  

Mix well.


Serve immediately or serve chilled.


TIPS:

Instead spaghetti Macaroni or any pasta can be used as your choice.

Depends on the head count change measurements of the quantity.

Add salad dressing as required and can be saved in the fridge for a week.

Adding veggies absolutely your choice.
