STEP BY STEP FRUIT CAKE:
INGREDIENTS:
FOR FRUIT MIX:
Raisins - 1/2 cup
Dried Mixed Berries - 1/2 cup
Mixed Nuts - 1/2 cup (Cashews, Almonds, Walnuts and Dates)
Dried apricots - 1/4 cup
Grape Juice - 2 Cups
FOR CARAMALIZED SUGAR SYRUP:
Sugar - 1/2 cup
Water - 1/4 cup
Hot water - 1/4 cup
FOR CAKE:
All purpose flour - 1 cup
Baking soda - 1/4 tsp
Baking powder - 1/2 tsp
Salt - 1/4 tsp
Sugar - 1 cup
Cinnamon stick - 1 small piece
Cardamom - 3
Clvoes - 3
HOW TO MAKE:
Take all the dry fruits in a big bowl and add 2 cups of grape juice. Mix well and marinate over night or 8 to 10 hours.
Mix well and marinate over night or 8 to 10 hours. The below picture in the right is the soaked fruit mix. Keep aside.
Take sugar in a mixie and make a fine powder along with cinnamon stick, cardamom and cloves. This is called spiced sugar powder. Keep aside.
Now let us make caramelized sugar syrup (this syrup gives nice color to the cake) Take 1/2 cup sugar and add 1/4 cup of water. Keep stove in a medium flame and mix well. Keep stirring.
Slowly the sugar syrup color changes to honey color and keep stirring continuously.
Slowly the color change in to coffee decoction and turn off the stove and immediately remove from the stove.
Add 1/4 cup of hot water in the sugar syrup it helps not crystals. Caramelized sugar syrup is ready. Keep aside.
In a bowl take curd, oil, melted butter and ground sugar powder. Whisk until sugar dissolved.
Add all purpose flour, salt, baking powder and baking soda. Mix gently and do not give more pressure.
Add caramelized sugar syrup, vanilla essence and fruit mix.
Mix well and the the mix should be flowing consistency not too thick.
Preheat oven 350° Fahrenheit and make for 60 minutes or until done.
Cool down completely and cut into desired pieces.
Fruit Cake is ready to serve 😋
TIPS:
I have added fresh grape juice, and store bought juice can be added.
Soaking dry fruits in the grape juice for over night or 8 -10 hours or can be soaked couple of days as well.
The more the fruit soak the more the flavor will be.
