Navarathri is around the corner and brainstorming which Prasad to make is a challenge for the ladies, and this will be more difficult for those who are also working. Thinking of that, I am posting an easy Kheer recipe made with Phool Makhana which can be made in just 15 minutes. Phool Makhana / Foxnut / lotus seeds have been proven to be high nutrient foods with medicinal values. To make it even more healthy, I added Coconut palm sugar instead of regular sugar.


INGREDIENTS:


Phool Makhana      - 1 cup 

Coconut sugar       - 1 cup 

Milk                      - 3 cups 

Cardamom powder - 1/4 tsp 

Ghee                     - 1 tsp 

Cashews                - 10 - 15 


HOW TO MAKE:


Dry roast makhana until crisp.  If you break the makahana it should get break easily and should be crispy then it is roasted. 



Make a coarse powder of roasted makahana.  In a pan heat milk and bring to boil. 


When boiling add ground makhana powder and stir well.  Cook for 2 to 3 minutes in low flame.  


Add coconut sugar (Any sugar of your choice can be added) and combine well. Cook for two minutes in low flame then add cardamom powder. Mix well.  


Turn off stove and transfer to the bowl.  Heat ghee in a pan and roast cashews until golden brown.  Garnish the kheer.  


Healthy & Tasty Makhana Kheer is ready to serve.  Serve hot or cold :-)


TIPS:

Any sugar of your choice can be added instead coconut sugar.  

Raisins and other nuts can be added.

For more rich and creamy condensed milk can be added instead sugar.  

Edible camphor can be added for more flavor.
