Peanut Sundal | Verkadalai Sundal | Nilakadalai Sundal

Sundal is one of the varieties of Prasadam made during the festive of Navarathri. It is also prepared for the festivals like Ganesh chaturthi, Varalakshmi Vratam. Today am presenting super healthy and nutritious evening snack which can be made in less than 20 minutes. To make this Peanut sundal peanuts are pressure cooked and then sautéed along with a mustard seeds, urad dal along with other spices. To give a little twist I have added some coarsely grounded cooked peanuts when tempering. This gives sundal look more rich and flavor.

INGREDIENTS:

Peanuts              - 2 cups 
Coconut              - 2 tbsp grated
Coriander leaves - for garnishing

TO TEMPER:

Oil                        - 1 tbsp
Mustard seeds   - 1/2 tsp 
Urad dal              - 1 tsp 
Asafoetida          - 1/4 tsp 
Green Chili         - 3 finely chopped 
Curry leaves       - few

HOW TO MAKE:

Pressure cook peanuts along with needed salt by adding 4 to 5 cups of water.  Keep aside. 


Take 2 tbsp of cooked peanuts and grind coarsely. 


Heat oil in a kadai, splutter mustard seeds add urad dal.  Saute until urad dal golden brown.  Add green chili, asafoetida and curry leaves. Add cooked peanuts, ground peanut paste.  Add salt if needed as we added earlier in peanuts. 


Combine well and cook for 2 to 3 minutes in medium flame.  Add grated coconut and coriander leaves.  


Mix well.  



Flavorful Peanut Sundal is ready to serve. 


TIPS:

Grinding method can follow for almost all the sundal varieties.  

Red chili can be added instead green ones. 

For make it more spicy add sundal powder.
