BONDA MOREKUZHAMBU / VADA MOREKUZHAMBU


I have posted four to five varieties of more kuzhambu recipes and today I am bringing Bonda Morekuzhambu which is very popular in Tamil Nadu.  This morekuzhambu is a traditional dish which is served in weddings and traditional ceremonies.  This is my family's all time favourite and they just love it. It will be time consuming but really worth it :-)  Let's go and prepare this scrumptious Bonda Morekuzhambu :-)

INGREDIENTS:

For Bonda:

Urad dhal - 1/2 cup
Pepper     - 1/4 tsp
Salt          - as needed
Oil           - for deep frying

To grind:

Rice                 - 1 tsp
Toor dhal         - 1 tsp
Green chillies   - 1
Ginger              - 1 inch piece
Cumin seeds     - 1 tsp
Grated coconut - 1/4 cup

To temper:

Oil                     - 1 tsp
Mustard seeds   - 1/4 tsp
Red chillies       - 2 break into pieces
Curry leaves     - few
Hing                 -  a pinch

For kuzhambu:

Thick curd           - 3 cups
Turmeric powder - 1/4 tsp
Salt                      - as needed

HOW TO MAKE:

Soak rice & toor dhal in one bowl and urad dhal in another bowl for 30 mins.


In a blender / mixie add soaked urad dhal, pepper & salt.  Sprinkle water and make a fine paste.  Do not add more water.  Keep aside.


Heat oil in a deep pan / kadai and take a urad paste little by little and drop it in the oil.  You can use a tsp as well.  Fry 8 to 10 bondas at a time.


Drain oil from the bonda by place it on the paper towel.  Bonda is ready.  Keep aside.


In a mixie / blender add soaked rice & toor dhal, grated coconut, green chilli, ginger and cumin seeds. Make a fine paste and keep aside.


In a bowl add 3 cups of curd and 1 1/2 cups of water.  Make butter milk by using whisk.  Add grounded paste, turmeric powder and needed salt.  Mix well and keep aside.


Heat a tsp of oil in a kadai splutter mustard seeds and add cumin seeds.  Add red chillies and curry leaves.  Add hing.  Then add mixed butter milk.  Mix well.  Let it get cook for 5 to 7 mins.  Slowly it will form a foam kind of bubbles.  Do not allow the butter milk to boil.That time add bondas and turn off the stove.


That time add bondas and turn off the stove.


Mix well.  Bonda Morekuzhambu is ready.



TIPS:

Do not allow butter milk to boil else it will turn watery.

Add less salt in bonda coz we are adding salt in the butter milk too.  Adding more salt in bonda will be salty when served.

Do not make butter milk too watery.  It should be neither thick nor watery consistency.
