KUSKA



I am a big fan of Kuska.  This is nothing but the plain rice cooked and flavoured with masalas without adding vegetables or meat.  Usually muslim people do this for all their festivals.  One of my friend Haze used to make this briyani whenever I visit her.  In urdu Kusk means plain.  Enjoy this flavourful kuska with salna or raitha.  I bet you all like this Kuska :-)


INGREDIENTS:

Basmati rice         - 1 cup
Onion                   - 1 thinly sliced
Green chillies      - 2 cut into pieces
Mint leaves          - 1/4 bunch
Coriander leaves - 3 tsp finely chopped
Coconut milk      - 1 cup
Red food color    - 2 to 3 drops
Water                  - 1 cup
Salt                      - as needed

To temper:

Oil                       - 2 tsp
Ghee                    - 1 tsp
Cinnamon stick   - 1 small size
Fennel seeds        - 1/4 tsp
Bay leaf               - 2
Cloves                 - 1
Cardamom          - 1
Star anise            - 2

HOW TO MAKE:

Wash and soak basmati rice for 10 to 15 mins.  Coconut milk I used a store one and it can be made at home.  Take a cup of grated coconut and add warm water little by little when you grind.  Strain and keep the water aside.


Heat oil and ghee in a pressure cooker.  Fry the masala items which is in the temper column.  Add sliced onions and green chillies.  Fry the onions until transparent.  Add chopped mint leaves and coriander leaves.  Blend well.


Add coconut milk, water and food color.  Mix well and allow to boil.


When the water started boiling, drain the rice and add in the mixture.  Mix well and add needed salt.
Allow two whistles and turn off the stove.   Once the steam released open the lid and serve hot.


Serve kushka with raitha or salna :-)


TIPS:

1:2 cup water ratio is perfect for this kuska.  Since the rice is getting soak for 15 mins it will get cook soon.  Adding more water will result the rice mushy.

It is a plain and flavoured rice so no need to add vegetables.  Adding vegetables will sounds like briyani.
