MANGO ICE LOLLY / MANGO MINI POPSICLES

Last week I bought ripen mangoes from HEB to make popsicles.  Kids are tired of having mango juice or smoothy.  Two days before I have posted Muskmelon popsicles and did not want to use the same shape of mould and then kids will ask why again muskmelon since the color is yellow.  Alright, I used ice cube trays for making this tiny, lovely lollies which my kids just loved it.  Ripen mangoes were very sweet and it get well set for making this lollies.  For this summer it's really good to make different flavours of popsicles unless buying artificial flavoured in store.  Enjoy making these kind of lollies and kids really will have fun.

INGREDIENTS:

Ripen mango      - 2 nos
Water                  - 1/2 cup
Sugar                   - 3 tsp

HOW TO MAKE:

Peel the skin of mangoes and cut into pieces.   In a blender / mixie add mango pieces and sugar. Make a fine paste of it.  Then add a water and again grind it.  The consistency should not be watery or very thick.  Keep it in a medium consistency.

Pour the grounded mango mixture in the ice tray and keep it in a freezer for 8 to 10 hours or over night.

Take a ice stick or long tooth pick and just place it in the middle of each cube.  Since the mixture is in a medium consistency the stick will stay stiff.  If you feel it is not then cover it with the foil then put the stick in the middle.  As shown in the sec pic.

Once it got frozen, show the tray on the running water.  Slowly and carefully pull it out.

Serve immediately.

TIPS:

If you like cardamom flavour add pinch of fine cardamom powder when you grind.

Do not add more water.

Use milk instead water and you can try with different shape of moulds.
