STEP BY STEP RAISINS PULAO:

INGREDIENTS:

Cooked Basmati Rice - 2 cups
Raisins                     - 1/2 cup
Onion                       - 1 Big finely chopped 
Garlic                       - 5 cloves finely chopped 
Coriander leaves       - for garnishing
Garam masala          - 1/2 tsp 
Green chili                - 5 slit in the middle 
Ghee                        - 1 tbsp 
Salt                          - to taste

TO TEMPER:

Oil                           - 2 tbsp 
Cinnamon stick         - small piece
Bay leaf                    - 2 
Cardamom                - 2 
Cloves                       - 2 
Cumin seeds              - 1 tsp     

HOW TO MAKE:

Cook basmati rice and keep aside.  Rice should not be sticky.  Heat ghee in a pan and roast raisins until puffed and golden brown.  Keep aside.   


Heat oil in a kadai add cinnamon stick, cardamom, bay leaf, cloves, cumin seeds, chopped onions, chopped garlic, slitted green chili along with need salt.  Saute until onion and garlic golden brown.  


Once golden brown, add garam masala, fried raisins and chopped coriander leaves.  


Add cooked basmati rice and keep stove in low flame.  Mix gently and add salt if needed. 


Flavorful Raisins Pulao is ready to serve.  Serve hot with any curry or raita of your choice. 


TIPS:

Saute onion and garlic until fully golden brown.  Onion should be like caramelized. 

For more spicy add only green chili as the red chilli powder may change the pulao color and the flavor.
