MADDUR VADA / MADDUR VADE


Maddur vada is a savoury fritter type of snack from the place called Maddur which is in Karnataka. These vada made of rice flour, sooji and maida flour which are mixed with onions, curry leaves and hing.  This flavourful vada is very easy to make and tastes awesome.  If you have unexpected guests dropping by then this hot and crispy vada will help you to treat. Try this easy recipe for this week end.

INGREDIENTS:

Maida / All purpose flour - 1 cup
Rava / Sooji / Semolina    - 1/2 cup
Rice flour                          - 1/2 cup
Onion                                - 1 finely chopped
Curry leaves                      - 1 string finely chopped
Coriander leaves               - 3 tsp finely chopped
Green chillies                    - 2 finely chopped
Asafoetida / Hing              - a pinch
Salt                                    - as needed
Oil                                     - for frying

HOW TO MAKE:

In a bowl add all the ingredients except oil.  Mix well by your hand.


Make a stiff dough by adding little water.  Keep aside for 10 to 15 mins.  Make small balls out of it. Grease zip lock and flatten the balls gently with your fingers one by one.



Heat oil in a kadai and drop the vadas one by one.  You can fry 3 to 4 vadas.  Fry the vadas until it turn in to golden color.  Flip both sides and cook.


Drain the vadas in the paper towl.



Maddur vada is ready.  Serve hot with any choice of chutney.


TIPS:

Do not add more water.  Since we are adding onion, it will leach out some more water.

I have added two green chillies and if you feel thats too spicy then add 1.
