SABUDANA LADOO / JAVVARISI LADDU / TAPIOCA PEARLS LADDU


Sabudana Ladoo is a sweet recipe which is very good for fasting as well as during festival days.  One of my friend Hema Ashish taught me Sabudana Kichadi which they used to make it on fasting days. Sabudana is called as Javvarisi in Tamil Nadu. In my place my mom and relatives make Javvarisi Payasam that is, Sabudana Kheer on festival days and I never cross this laddu recipe from Javvarisi.  I saw this recipe on a TV show and I wished to make this for this Navaratri festival.

INGREDIENTS:

Sabudana / Javvarisi - 1 cup
Sugar                         - 1 cup
Grated coconut          - 2 to 3 tsp
Nutmug powder         - a pinch
Cashews                     - 1/4 cup broken
Ghee                           - 4 to 5 tsp

HOW TO MAKE:

In a pan / kadai dry roast sabudana in medium flame until it turn into golden brown.  Allow to cool down and make a powder of it by using blender / mixie.  Keep aside.


Make a fine powder of sugar.  When you grind sugar you can add nutmug powder too.  Make a fine powder of grated coconut too.


In a bowl mix grounded sabudana, sugar and grated coconut.  Heat a ghee in a pan / kadai and fry cashews until it turn into golden brown.  Add ghee mixture on the grounded powder.


Mix the grounded powder and the ghee mixture.  Blend well and when it is warm enough start to make small balls.  Make it tighten when you make balls.


Do follow the same for all the mixture.


Sabudana Ladoo is ready.


TIPS:

When you hold the mixture to make balls, tighten your palm so that the ladoo will get a grip and it will not break.

For best results start making ladoo when the mixture is warm enough.
