PASTA & VEGGIE SOUP



I never tried any soup in my childhood.  Somehow I was skipping and now....donno what wonder happened!!! I just love soup to the core :-) My friend hema always add Pasta when she makes to make his son to eat.  I followed the same way now, and here is the result of Pasta & Veggie soup which my kids enjoyed a lot.  Let me stop this story and here you go for the step by step process to prepare this scrumptious soup :-)

Yield   - 5 cups

INGREDIENTS:

Carrot, mushroom, 
Green shallots, corn   - 2 cup finely chopped
Capsicum                   - 1 finely chopped
Pasta (any)                 - 1 cup
Beans                         - 10 to 15
Baby spinach             - 1 handful
Onion                         - 1 finely chopped
Tomato                      - 1 finely chopped
Pepper                       - 1 tsp
Salt                            - as needed

To temper:

Olive oil                    - 1 tsp
Bay leaf                     - 1 
Garlic                        - 2 cloves crushed

HOW TO MAKE:

Cut all the vegetables into pieces and keep aside.  In a pressure cooker add a tsp of oil and add bay leaf and crushed garlic.  Add chopped onions and tomato.  Saute them for a minute. 


Add mixed vegetables. For beans I just cut only the two corners and made into big pieces.  Saute them well. Add pasta and give a quick blend.


Add four cups of water and needed salt.  Wash the spinach and just put it on the top.   Close the lid and allow two whistles.


Add coarsely grounded pepper.



Hot soup is ready to serve.  Eat as it as or serve with bread.



TIPS:

Add needed water before you close the pressure cooker.
