CARROT KHEER / GAJAR KI KHEER


Carrot kheer is very easy to make and it is a very simple and healthy dessert.  I used to make quite often in the summer holidays since my kids love this.  Here in Houston spring started and its just looks like summer :-)  I bought bag full of fresh red carrots in costco for making juice alternative days and last week my son asked me to make kheer.  On Rama Navami day I made this and today I got a time to post.  This delicious kheer is a great idea for get-together & pot luck.  Enjoy making this kheer and serve chilled or hot.  This is very healthy and having this in summer will help us to beat the heat.

INGREDIENTS:

Carrots                   - 1/2 kg or 10 carrots
Milk                       - 1 ltr
Condensed milk     - 1 tin (sweetened)
Ghee                       - 1 tsp
Cashew nuts           - 5 to 6 break into pieces
Cardamom powder - a generous pinch
Saffron                    - a pinch for garnishing

HOW TO MAKE:

Cut the edges of the carrots and cut into pieces.  Pressure cook the carrots with a cup of milk and allow 2 to 3 whistles.  Allow to cool and in a mixie / blender make a fine puree of it.  


Boil the remaining milk in a deep vessel (I used cooker).  Add a tin of condensed milk and blend well.  When it boils add carrot puree.  


Mix well and allow to boil.  Turn off the stove and sprinkle cardamom powder.  Mix well.  


Heat a ghee in a small pan and fry cashew nuts until it turn into golden color.  Pour it in the kheer and mix well.  


Serve hot or chilled.



TIPS:

Sugar can be used instead of condensed milk.  If you use whole milk then sugar is the best option.  I used 1% fat free milk hence I used condensed milk to give a thick texture.  

Prepare this kheer a day before and refrigerate to get an awesome cold drink.

If you are adding condensed milk then skip adding sugar.  Either one can be added to get the better result.  Adding both will give more sugar taste and it will dominate the carrot flavour.
