CORN FLOUR HALWA / KARACHI HALWA




A year before my friend Sangeetha"s family came for dinner and she brought corn flour halwa for a dessert.  Till then I was waiting to post this recipe and now am here for Diwali recipes.  It is very easy to make and the amount of ghee consumption is very less unlike other halwa recipes.  I wanted to try making this in microwave too.  One of my friend Manju told me that she always makes it in microwave.  This is also called as Karachi Halwa.  Trust me you will love this corn flour halwa and try to make this delicious halwa for this Diwali :-)

INGREDIENTS:

Corn flour              - 1 cup
Sugar                      - 2 cups
Water                      - 1 1/2 cups
Cardamom powder - a pinch
Cashews                  - 10 break into pieces 
Ghee                        - 3 tsp
Red food color        - a pinch

HOW TO MAKE:

In a bowl take corn flour and food color.  Add 1 1/2 cups water little by little and mix well without any lumps.  Keep aside.  


In a kadai / pan take sugar and add a cup of water.  Allow it to boil and let the sugar dissolves completely.  Let the syrup boil well and no need to wait for string consistency.  When it become thick add corn flour mixture slowly and in another hand stir it with spatula to avoid forming lumps.  Keep stirring.  


Meanwhile, heat ghee in a small pan / kadai and fry cashews until it turn into golden brown.  When the mixture become thicken add fried cashews with ghee and keep stirring.  Keep on stirring until you see the halwa consistency.  Add cardamom powder.  


Keep stirring and slowly the mixture starts leave the side of the pan.  Transfer to the serving bowl. Serve hot or cold.  Keep refrigerated and it stays for 5 days to a week.  



TIPS:

Grease plate with ghee and spread the mixture.  When it warm enough cut into pieces. 

Try with custard powder to make custard halwa.

Do not add more water in the mixture and it takes lot time to thicken.

Add any nuts as your choice.  

Use non stick pan or kadai to avoid stick with the vessel.  

Fry the nuts and keep aside before you start making halwa.  So that you need not to fry when you are stirring.  I made it before but collaged picture in the next step :-)
