STUFFED PAVAKKAI FRY / STUFFED BITTER GOURD FRY




As always says, this recipe was in my to do list for a long time and could not make it for the past one year.  This time I just did not want to skip it at any cost and made it yesterday.  One of my favourite vegetable and I just love pavakkai in any form.  I learnt this recipe from my Banglore friend Savitha and it's just delicious.  She did not add peanut and sesame seeds and I have added this on my family taste bud.  Thank you for the wonderful recipe Savitha :-)  The stuffing inside will go well with outer pavakkai and woww....its heaven.  Trust me you will love this any rice and rotis.  That too having with rasam rice and curd rice is the best.  Enjoy making this healthy dish and stay healthy.  








INGREDIENTS:

Bitter gourd / Pavakkai - 5 to 6
Oil                                 - for shallow fry

For stuffing:

Oil                                  - 1 tsp
Onion                             - 1 finely chopped
Ginger garlic paste        - 1 tsp
Red chilli powder          - 1/2 tsp
Coriander powder          - 1 tsp
Cumin powder               - 1/4 tsp
Turmeric powder           - 1/4 tsp
Asafoetida                      - a pinch
Peanuts                           - 1/4 cup
Sesame seeds                  - 2 tsp
Salt                                 - to taste

HOW TO MAKE:

Wash bitter gourd slit in the middle and remove the seeds carefully without breaking.  In a bowl of water put the bitter gourd and soak it for 20 mins.  The reason is it will reduce the bitterness.  After 20 mins drain the water fully and wash well.  Keep aside. 


Meanwhile, during the soaking time will start preparing the stuffing part.  Heat oil in a kadai / pan add cumin seeds.  Add chopped onions and fry until it turn into transparent.  Add ginger garlic paste. Blend well until the nice aroma comes and add red chilli, coriander, turmeric and cumin powder. Add asafoetida and needed salt.  Blend well cook for 2 to 3 mins until it form a thick gravy.  


Meanwhile make a coarse powder of peanuts and sesame seeds.  Add the coarse powder in the onion mixture. 

Mix well and allow to cool down.  Once the mixture cool down carefully stuff the mixture inside the bitter gourds as shown in the picture below.  


Heat oil in a kadai / pan and place the stuffed bitter gourds.  Cover it with lid and allow to cook. Now and then open it and flip the bitter guards to get cook in all the sides.  Slowly it will leave the oil in sides and do not worry if it comes out.  


When all the bitter gourds cooked well turn off the stove and remove it from the kadai / pan.  Place it on a paper towel to remove excess oil.  Serve with rice or rotis.


TIPS:

Adding peanuts and sesame seeds is purely your choice and you can skip that.

You can add chopped tomato for stuffing.

Chopped onions, tomatoes, grated ginger and garlic can be stuffed raw and then can be cooked.
