POTATO BAJJI




INGREDIENTS:

Potato                  - 2 Peeled and sliced into rounds
Gram flour            - 1 Cup
Rice flour              - 1/4 Cup
Corn flour             - 1 Tsp
Red chilli powder  - 1 Tsp
Turmeric powder  - 1/4 Tsp
Asafoetida            - 1/4 Tsp
Baking soda          - 1/4 Tsp
Salt                      - 1 Tsp (or as needed)
Oil                       - for deep frying

HOW TO MAKE:

* Mix gram flour, rice flour, corn flour, red chilli powder, turmeric powder, asafoetida, baking soda and salt
together in a bowl

* Add 1 cup of water to make smooth and thick batter and keep it aside for 20 to 30 minutes.

* Heat oil in a deep pan.

* Coat the potato slices by dipping them in the mixed batter.

* Fry a few slices at a time over medium flame till they are getting golden brown on both sides.

* Drain on paper towels.

* Follow the same for all the pieces.

* Server with coconut chutney or chutney of choice.

TIPS:

Choose Onion, Green plantain (Vazhaikai), Eggplant instead of potato.

Instead of rice flour add idly batter 1/4 cup
