BAKED VEG SALAD



INGREDIENTS:

French fry potato   - 1 cup (frozen)
Zucchini                - 2
Broccoli                - 1
Carrot                   - 2
Chilli flakes          - 1 tsp
Oregano               - 1 tsp
Parsley                 - 1 tsp
Salad dressing     - 2 tsp (I used sweet chilli mango)
Olive oil spray    - as needed
Paprika               - 1 tsp

HOW TO MAKE:

Spread the french fry potatoes on the bake tray and allow them to thaw.  Spray olive oil evenly and sprinkle paprika.  Keep aside.


Cut zucchini, carrots and broccoli into pieces.  Preheat oven 160°C fan forced.  In a tray place zucchini, carrots and brocoli pieces.  Sprinkle oregano, parsley and salt.  Toss well to combine.  Keep potato tray and vegetable tray in the oven and roast for 20 minutes or until the vegetables are turned brown and tender.  Set aside for 10 minutes to warm slightly.





Transfer vegetables in to the salad bowl or big bowl and add sweet mango chilli salad dressing and chilli flakes.  Shake well to combine.

Baked vegetable salad is ready to serve :-)




TIPS:

Use different vegetables like sweet potato, turnip, beans

Dry fruits can be added at the time of serving.
