KALKANDU PONGAL / SUGAR CANDY PONGAL



Kalkandu pongal is one of my favourite pongal.  I have tasted this first time in my Uncle's retirement function.  I never new that was made by sugar candy and when I ask my mom to know about the sweet then only I knew it was Kalkandu Pongal :-)  Enjoy this pongal festival with Kalkandu :-)

INGREDIENTS:

Raw rice                - 1 cup
Moongdhal            - 3 tsp
Kalkandu / Candy - 1 cup
Milk                      - 1/2 cup
Cardamom powder- a pinch
Ghee                      - 2 tsp
Cashews                - few
Raisins                  - few

HOW TO MAKE:

Dry roast moongdhal in a pan till nice aroma comes.  Wash rice and add moonghdal with 2 1/2 cups water.  Pressure cook for 4 to 5 whistles and wait till the steam get released.


Make a fine powder the kalkandu and keep aside.   Once the cooker steam released mash well by adding the milk and add sugar candy powder too.  Keep the cooker on low flame, keep stirring adding the ghee.  Add cardamom powder and mix well.



Heat 1/2 tsp of ghee fry cashews and raisins.  Add in the pongal and mix well.  Turn off the stove.


Yummmm Sugar Candy pongal is ready.
